Butternut Squash Asian Potstickers

So I got this recipe from the Hungry Girl Website and I thought I would share. I am always looking for ways to use squash and I love Asian food. The nutrition content is not bad, although it is a little high on the sodium. Enjoy!

Calories per service (5 peices) 161 calories, 0.5g fat, 786mg sodium, 35g carbs, 3g fiber, 5g sugars, 4.5g protein


25 small square wonton wrappers (found in the refrigerated section of the supermarket with the other Asian items)
3 1/2 cups peeled and cubed butternut squash (about a pound)
1/2 cup grated carrots
1/4 cup chopped scallions
2 tbsp. light or low-sodium soy sauce
1 tsp. minced garlic
1/4 tsp. salt
1/8 tsp. ground ginger

2 tbsp. light or low-sodium soy sauce
1 tbsp. red wine vinegar
1 tbsp. sweet chili sauce
