This CK recipe is wonderful! I tried it today for the first time. So easy to make and SOOO tasty! To me, it's a treat that borders between a great bread pudding and a wonderful custard pie.
Cherry Oatmeal Bake
Oats and cherries pack a punch in this yummy breakfast or brunch dish.
• 1/2 cup dried tart cherries (I chopped the bigger ones)
• 1/2 cup quick oats, uncooked
• 3 Tbsp sugar (I used granulated Splenda)
• 1/8 tsp salt
• 2 cup skim milk
• 1/4 cup egg substitute
• 1/2 tsp almond extract
(I also added a few dashes of cinnamon)
Directions:
Preheat oven to 350ºF.
Combine cherries, oats, sugar, and salt in a medium bowl. Stir in milk, egg substitute and almond extract.
Spray four 10-ounce custard cups with non-stick cooking spray. Divide mixture evenly between custard cups.
Place filled cups on baking sheet. Bake in preheated oven 30 to 40 minutes, or until centers are still slightly soft. Serve warm.
4 servings @ 156 calories each (Mine turned out at 170 calories each bc I used the entire package of dried cherries which was 3.5 ounces)
