Thought I would share this recipe I found today online for lemon curd. I am going to try it tonight with key limes for a filling for a cake. Curd usually takes me around an hour to make so any shortcut is always appreciated.
Microwave Lemon Curd
1 cup white sugar
1 cup fresh lemon juice
2 lemons zested
1/2 cup unsalted butter
1. In microwave safe bowl, which sugar and eggs until smooth. Stir in juice, zest and butter. Cook in microwave in one minute intervals, stirring after each minute until mixture is thick enough to coat back of a metal spoon. Pour into small glass jar and store up to three weeks in the refridgerator.
I will probably make a low fat pound cake to serve this in between with some fat free cool whip. I will let you all know the final result!
