The skin of a mango should not be eaten as it is very acidic. Try either of these two ways to prepare mango:

Slice the mango along the longest sides, beside the stone. This area is called the 'cheek'. |

Make criss-cross cuts into the flesh, without cutting the skin. |
|
Push the mango flesh upwards from underneath the skin. Eat the cubes and enjoy! |
|
With a sharp thin-bladed knife, cut off both ends of the fruit. |
|
Place fruit on flat end and cut away peel from top to bottom along curvature of the fruit. |
|
Cut fruit into slices by carving lengthwise along the pit. |
Mango is best eaten raw. Pieces can also be frozen, made into juice, marmalade, compote, or puréed into sauces. Chutney is prepared from unripe, green mangoes. Dried mangoes are also available in the dried-fruit section of many markets.
