Touchdown! Whether for Super Bowl, Monday night football, or touch football - these kebobs score big!

Suggestions:

If using wooden skewers, for best results, pre-soak them for 30 minutes prior to threading food.

Ingredients:

1 1/2 lb fresh skinless, boneless turkey breasts or thighs, cut into 1-inch cubes

1/4 cup vegetable oil, such as canola

1/4 cup fresh lime juice

1 tsp chili powder

1/2 tsp garlic powder

1/2 tsp salt

2 medium zucchini, cut in chunks *

2 medium red bell peppers, seeded, cut into chunks

2 medium red onions, peeled, cut in chunks


Directions:

Combine oil, lime juice, chili powder, garlic powder and salt.

Toss vegetables and turkey cubes in oil mixture to coat. Marinate in the refrigerator for one hour.

Thread the marinated turkey and vegetables onto skewers. Grill over medium heat for 10 to 15 minutes, or until turkey is cooked throughout and reaches an internal temperature of 170ºF.

Variations:

* If zucchini is unavailable, can replace with green pepper or other vegetable.
