A savory muffin packed with Omega-3 and fiber.
In a bowl mix together flour, flaxseed meal, bran, baking powder, and salt.
In a separate bowl, combine egg substitute, buttermilk and molasses. Stir until molasses is distributed evenly in the liquid. Slowly stir liquid into dry ingredients, blending until all the dry ingredients are moistened.
Spoon into muffin pan. Bake for 17 minutes in 450°F oven.
Muffins can be frozen. These are savory muffins and would make a nice dinner accompaniment.
