Ingredients:
24 medium seedless grapes
1 Tbsp chopped chives
1 Tbsp chopped parsley
1/4 tsp chili powder
1 Tbsp fruit chutney
1 cup part-skim ricotta cheese
1 tsp unflavored gelatin (such as Knox gelatin)
1 Tbsp boiling hot water
2/3 cup finely chopped walnuts (2.3 oz)
Directions:
Wash and gently dry grapes.
Mix chives, parsley, chili powder, fruit chutney and ricotta cheese together in a bowl. Dissolve gelatin in the hot water and add to the cheese mixture.
Coat each grape with about 1 teaspoon of the mixture. Roll into small balls then coat lightly in walnuts. Refrigerate for 3 to 4 hours to set.
Cut in half and serve as a cocktail appetizer.
