


Mmmm, another sweet idea for a low-fat muffin.
2 cup self-rising flour
2 tsp baking powder
1 tsp baking soda
1/2 cup oat bran
1 cup unsweetened applesauce
1 Tbsp canola oil
1 egg, lightly beaten
1/2 cup skim milk
1/3 cup maple syrup
3/4 cup dried apples, chopped
1/2 cup walnuts, chopped
1/4 cup raw sugar
2 tsp cinnamon
Preheat oven to moderate 350°F. Prepare a 12-hole muffin pan with muffin papers.
Sift flour, baking powder and soda in a medium bowl. Stir through oat bran. Make a well in the center.
Into the well in the center, use a large table fork and stir in the combined applesauce, oil, beaten egg, skim milk, maple syrup, apples, walnuts, raw sugar, and cinnamon until the mixture is just combined.
Spoon mixture into prepared pan. Bake 25 to 30 minutes until golden brown and baked through.
Let stand 5 minutes before turning muffins onto wire rack to cool.
