An easy cake for holidays or special occasions.

Ingredients:

2 Tbsp oil

3 1/2 cup unsifted all-purpose flour

6 eggs

1 cup sugar

1 cup honey

1 tsp baking soda

1 tsp allspice

1 tsp cinnamon

1/2 tsp cloves

1 1/2 tsp baking powder

1 cup finely chopped dried figs (in grinder or food processor)

1/2 cup finely chopped nuts (such as walnuts)


Directions:

Lightly flour and grease 2 loaf pans.

In large bowl, mix eggs, sugar, honey and oil. Stir in flour, baking soda, allspice, cinnamon, cloves and baking powder. Fold in figs and nuts. Pour batter into 2 greased/floured loaf pans.

Bake in preheated slow 300ºF oven for 1 hour or until firm to the touch in the center. Unmold and cool on racks. Cool thoroughly before cutting into slices.

Variations:

For variety, lightly sprinkle with powdered sugar.
