A traditional Jewish cake that is served at joyful celebrations, such as engagements, weddings and the New Year. It symbolizes hope that the future will be sweet.

Ingredients:

3 eggs

1 cup Equal® Sugar Lite™

1 cup honey

3/4 cup vegetable oil

1/2 cup strong brewed coffee

1/2 cup water

2 1/2 cup all-purpose flour

2 tsp baking powder

2 tsp ground cinnamon

1/2 tsp nutmeg

1/2 tsp baking soda

1/2 tsp salt


Directions:

Preheat oven to 350°F.

Beat eggs in large mixing bowl until well blended. Mix in Equal® Sugar Lite™, honey, oil, coffee and water until blended. Stir combined dry ingredients into liquid mixture until well blended.

Pour batter into a 12-cup Bundt® cake pan well sprayed with non-stick cooking spray. Bake in preheated oven 45 to 50 minutes or until a wooden pick inserted in center comes out clean.

Cool cake in pan on wire rack 10 minutes. Remove from pan. Cool completely on wire rack. Store cake in airtight container at room temperature.
