Yummy bars that make a great mid-afternoon or after-school snack.

Ingredients:

3 cup rolled oats

1 cup finely diced dried apricots

3/4 cup powdered sugar substitute *

1/3 cup sliced almonds

1 tsp ground cinnamon

1/4 cup water

1/2 cup lowfat apricot yogurt

1/4 cup light margarine, melted

1 Tbsp sesame seeds


Directions:

Preheat oven to 350°F.

Combine oats, apricots, sugar, almonds and cinnamon in a bowl.

In a separate bowl, combine water, yogurt and margarine, then fold into oat mixture.

Press mixture into a lined baking pan, sprinkle with the sesame seeds and mark into 24 bars. Bake in preheated oven for 20 minutes or until crispy and golden brown. Cool in pan and slice.

Variations:

* Can replace 3/4 cup sugar for sugar substitute (1 bar, made with sugar: 138 calories, 25.7g carbs, 11g total sugars).
