Healthy oatmeal cookies with a punch of protein, fiber and healthy fat.
Suggestions:
Cook a little longer for a little more crunch.
The cranberries help keep the cookies moist.
The flax seed-water mixture replaces the otherwise 2-egg ingredient.
Ingredients:
1 cup unsweetened applesauce
1 cup dark brown molasses
1/2 cup granulated sugar
1 1/2 cup wholewheat flour
1 tsp baking soda
1 tsp cinnamon
2 Tbsp milled flax seed mixed with 6 tbsp water
1 tsp vanilla extract
3 cup oats, dry
1 cup whole cranberries
Directions:
Preheat oven to 350º F.
In a large mixing bowl, mix applesauce, molasses and sugar until creamed. Blend in flour, baking soda and cinnamon. Add flax seed-water mixture and vanilla; stir. Then, stir in oats and cranberries.
Onto a lightly greased baking sheet, drop cookie dough in about 1 tablespoon measures making about 36 cookies. Bake in preheated oven for 11 to 12 minutes. Let cool on wire rack or wax paper.
