Papaya and Ricotta Fruit Toast

- 8 slices raisin bread
- 7 oz low-fat ricotta cheese (200g)
- 12 slices papaya (or 12 slices cut in half), deseeded and peeled (approx. 1 large)
- 1/2 cup sugar-free maple syrup
Directions:
Toast the bread.
To serve, top the toast with ricotta cheese and papaya slices. Drizzle maple syrup on top. Serve.
Variations:
Other fruit breads and/or regular maple syrup may be substituted.
