  • 2 medium grapefruit (pink or white)
  • 1/2 cup raisins, unpacked
  • 1/2 cup dried apricots
  • 7 oz low-fat creamed cottage cheese (1%)
  • 1 Tbsp honey

Directions:

Remove flesh from grapefruit and cut into segments.

In a bowl, combine grapefruit, raisins and apricots together with cheese and spoon into grapefruit shells. Top with a drizzle of honey.

Serve chilled, or grilled until warmed through.

Variations:

If a sweeter taste is desired, add an extra tablespoon of honey.
