Grapefruit with cottage cheese, dried fruit and a drizzle of honey.

Suggestions:

Can be served chilled or grilled until warmed through.

Ingredients:

1/2 cup raisins

1/2 cup dried apricots

200 g lowfat creamed cottage cheese

2 Tbsp honey

2 medium grapefruit (pink or white)


Directions:

Remove flesh from grapefruit and cut into segments.

In a bowl combine fruits together with cheese and spoon into grapefruit shells.

Top with drizzle of honey.

Serve chilled, or grilled until warmed through.
