This will put some life into your muffins.
1 tomato, sliced
2 eggs
1/4 cup skim milk
2 tsp wholegrain or coarse-grain mustard
2 Tbsp reduced fat cheddar cheese, grated
2 snipped chives for garnish
2 English muffins, split
Toast muffins on both sides, top with tomato and keep warm.
Lightly whisk together eggs, milk, mustard and cheese and pour into a small non-stick saucepan. Cook without stirring until mixture sets around the edges, then stir occasionally until scrambled.
Spoon over muffins, sprinkle with chives and serve.
