Spicy chicken with mushrooms and sesame seeds.
Cover mushrooms with hot water. Soak for 30 minutes. Drain well. Slice finely.
Place the chicken in a large saucepan with the mushrooms, tomatoes, onions, bell pepper, ginger, stock, oil, and seasonings. Bring to a boil.
Reduce heat. Simmer, uncovered, for 25 to 30 minutes or until chicken is tender and cooked through. Serve on a bed of cooked rice, sprinkled with sesame seeds.
