Ingredients:

This turkey kielbasa recipe lowers the calories, fat, cholesterol and sodium by replacing regular kielbasa with turkey kielbasa and eliminating the beef broth. Replacing regular potatoes with sweet potatoes and apples, this makeover perks up an old favorite.

  Recipe Makeover

1 bottle (12 oz) dark beer or ale

2 Tbsp Dijon-style mustard

1/2 tsp caraway seeds

6 cup coarsely shredded cabbage

0.45 kg turkey kielbasa or smoked turkey sausage (low-sodium), cut on the diagonal into 2-inch pieces

1 Granny Smith apple (or Braeburn or Winesap), cut into ¼ - inch wedges

1 can (16 oz) sweet potatoes, drained, cut into 1½ - inch cubes


  Traditional Recipe

2 medium potatoes (such as russet), peeled and diced

1 medium head cabbage, chopped

1 large onion, sliced

1/4 tsp black pepper

1/4 tsp caraway seeds

0.68 kg smoked kielbasa, cut into 1½ - inch cubes

1 can (14 oz) beef broth


Directions:

In a large deep skillet over high heat, combine beer, mustard and caraway seeds. Bring to boil. Add cabbage, reduce heat to medium-low and cover. Simmer 5 to 8 minutes or until cabbage is crisp-tender.

Add turkey kielbasa, apple and sweet potatoes. Increase heat to high and bring mixture to boil. Reduce heat to medium-low, cover and simmer 3 to 5 minutes or until apple is crisp-tender and all ingredients are hot.

Variations:

If using regular turkey kielbasa or turkey sausage, sodium = 798 mg.
