These juicy marinated chicken breasts make a tasty meal.

Ingredients:

2 medium Delaware potatoes (or Russet)

4 chicken breasts

1/4 cup low-sodium soy sauce

1/2 lemon, juiced

1/4 cup olive oil

1/2 Tbsp oregano

1/2 tsp garlic powder

1 dash of freshly ground black pepper


Directions:

Combine marinade ingredients. Mix well. Pour over chicken and allow to stand for 1 hour.

Leaving the skin on, cut potatoes into 3/4-inch cubes. Microwave in salted water for 5 minutes (or cook in water for 10 minutes), and thread onto skewers.

Cook the potato skewers on the barbecue for 10 minutes, basting occasionally with the chicken marinade. Place the chicken breasts on the barbecue and cook for 10 to 15 minutes, basting frequently.
