Ingredients Convert to Imperial

  • 400 g orange winter squash, such as butternut
  • 1 large zucchini
  • 1 Tbsp butter
  • 2 slices Canadian bacon or strips of lean turkey bacon, chopped
  • 300 g skinless, boneless chicken breasts, chopped
  • 2 tomatoes, chopped
  • 1 Tbsp chopped fresh lemongrass

Directions:

Cut winter squash and zucchini into sticks. In separate containers/pans microwave or steam until just tender.

Melt butter in a saucepan. Add bacon and chicken. Stir over medium heat until bacon and chicken is cooked. Add tomatoes. Cook for 2 minutes.

Add lemongrass, zucchini and winter squash. Toss to combine, and serve immediately.

Variations:

Serve with toasted herb bread, if desired.
