Turkey, Mandarin and Poppy Seed Salad
A colorful dish - great for using leftover Thanksgiving turkey, or anytime!

(if necessary, for pre-cooking turkey)
- 1/4 cup orange juice
- 1 1/2 Tbsp red wine vinegar
- 1 1/2 tsp poppy seeds
- 1 1/2 tsp olive oil
- 1 tsp Dijon-style mustard
- 1/8 tsp pepper
- 5 cup red leaf lettuce, washed, dried, chilled and torn
- 2 cup baby spinach leaves, washed, dried, chilled and torn
- 0.23 kg cooked skinless turkey breast, cut into 1/2 inch julienne
- 1 can (10 ½ oz) mandarin oranges, drained
- 1 as needed, orange zest
Directions:
DRESSING: In small bowl combine orange juice, vinegar, poppy seeds, oil, mustard and pepper. Set aside.
SALAD: In large bowl toss together lettuce, spinach, turkey and oranges. Pour dressing over turkey mixture.
Garnish with orange zest and serve immediately.
Tips:
Use leftover or pre-cooked turkey.
