(to hard boil eggs)
Yield: 1 x 3/4 cup serving
Peel the shell off of the eggs. Remove the yolks from 2 of the eggs and discard.
Mash the eggs up with a fork until fluffy. Mix the remaining ingredients.
Serve with salad greens, as a sandwich filling or on crackers.
