A hot and sweet, crunchy breakfast.

Ingredients:

4 tsp low-sugar apricot fruit spread (such as Polaner's)

1/4 cup part-skim ricotta cheese

4 slices raisin or fruit bread

1 banana, sliced

1/2 tsp cinnamon


Directions:

Combine fruit spread and ricotta. Spread over 2 slices of bread.

Top with sliced banana, sprinkle with cinnamon and top with remaining slice of bread. Cook in a toaster oven until toasted and warmed through.

(If toaster oven isn't available, toast on both sides under a grill or broiler until golden.)
