Creamy Rice Pudding with Strawberries and Kiwi

An easy rice dessert crowned with fresh fruit.

Ingredients:

2 cup cooked short grain rice

2 cup skim milk

1/4 cup sugar

3/4 Tbsp vanilla

1 1/2 fresh kiwifruit

6 fresh strawberries

6 Tbsp light whipped cream (garnish)

1 Tbsp orange zest


Directions:

Combine cooked rice, milk, sugar and vanilla in a large stockpot. Bring to a boil; reduce heat and simmer over low heat, uncovered, for 15 to 20 minutes until very creamy and thickened. Remove from heat and let cool (mixture will thicken more as it cools).

While mixture cools, peel and slice each kiwi into 4 slices and slice strawberries.

Spoon pudding into serving dishes.

When ready to serve, top each serving with 1 tablespoon whipped cream, 1 kiwi slice and 1 sliced strawberry. Garnish with orange zest.
