Whether as a treat or a special occasion gift, these yummy fruit bites are sure to please!
Rinse blueberries, spread on paper towels and pat dry. Line a baking sheet wih wax paper or parchment paper.
In a small bowl or top of a double boiler, over barely simmering water, place chocolate. Stir until melted. Remove bowl from hot water. Gently fold in blueberries.
Make clusters by spooning 4 or 5 warm chocolate coated blueberries onto wax paper, placing them 1 inch apart. (Or spoon mixture into silicone candy molds.**)
Refrigerate until firm, about 30 minutes. Transfer to an airtight container and refrigerate for up to three days. (For gift presentation: place clusters in pleated paper candy cups and arrange in a box.)
* If preferred or during off-season, can replace fresh with dried blueberries. And/or, can replace dark with milk or white chocolate.
FOR SPECIAL OCCASIONS:
VALENTINE'S AND MOTHER'S DAY: Spoon heart-shaped mounds, each made with 3 chocolate-coated blueberries onto wax paper-covered sheet pan. Chill. Makes about 30 mini-heart shapes.
CHRISTMAS: Arrange chocolate-coated blueberries in wreath shapes or rounds. After the shapes have set, decorate with tube frosting or colored sugar.
HANUKKAH: Spray dreidel- or star-shaped cookie cutters with non-stick spray. Place on wax paper. Using white chocolate-coated blueberries, fill each chill until firm. Remove from cookie cutters and decorate.
HOSTESS GIFT: Make or purchase small sugar cookies. Spoon a small amount of the blueberry-dark chocolate mixture on top of each cookie allow to set.
