Layers of creamy rice, cherries and jelly in parfait glasses.
To serve top with ricotta cream and a wafer.
1 Tbsp reduced fat margarine
1 1/2 cup lowfat milk
1/2 cup sugar
1 medium can cherries
1 sachet of diet port wine jelly crystals
1 1/2 cup cooked white rice
Place rice in saucepan with butter, milk and sugar, simmer, stirring occasionally, until creamy, about 15 minutes. Cool.
Make 1 port wine and cherry jelly, with liquid from canned cherries plus water to make 1 1/2 cups liquid. When almost set add cherries, chill until firm.
Place alternate layers creamy rice and jelly in parfait glasses.
