Layers of creamy rice, cherries and jelly in parfait glasses.
Preparation Time: 20 mins
Cooking Time: 15 mins
Yield: 6 x 1 cup servings
Place rice in saucepan with margarine, milk and sugar. Simmer, stirring occasionally, until creamy, about 15 minutes. Cool.
Make 1 port wine and cherry jelly, using liquid from canned cherries plus water to make 1-1/2 cups liquid. When almost set, add cherries. Chill until firm.
Place alternate layers of creamy rice and jelly-cherry mixture in parfait or dessert glasses.
To serve top with Ricotta Cream and a wafer (see recipe link below).
