Ingredients Convert to Imperial

  • 1 1/2 cup cooked white rice
  • 1 Tbsp reduced-fat margarine
  • 1 1/2 cup low-fat milk (1%)
  • 1/2 cup sugar
  • 1 sachet of sugar-free port wine jelly crystals
  • 1 medium can cherries, in water or own juice

Directions:

Place rice in saucepan with margarine, milk and sugar. Simmer, stirring occasionally, until creamy, about 15 minutes. Cool.

Make 1 port wine and cherry jelly, using liquid from canned cherries plus water to make 1-1/2 cups liquid. When almost set, add cherries. Chill until firm.

Place alternate layers of creamy rice and jelly-cherry mixture in parfait or dessert glasses.

Variations:

To serve top with Ricotta Cream and a wafer (see recipe link below).
