Yield: 8 x 1 cup servings
A delightful, nourishing dish that will brighten up your table! Serve as a dessert salad, an entrée salad or as a side salad.
Ingredients:
2 cup sliced fresh strawberries
1 1/2 cup cantaloupe, cubed
1 cup fresh blueberries
1 cup fresh raspberries
1 cup sliced kiwi
2 cup cubed reduced-fat Wisconsin Havarti cheese
1/3 cup orange juice
2 Tbsp olive oil
2 Tbsp honey
2 Tbsp chopped basil leaves
Directions:
Combine strawberries, cantaloupe, blueberries, raspberries, kiwi, and cheese in large bowl.
In a small jar with tight fitting lid, mix together orange juice, oil, honey and basil. Shake vigorously to combine. Pour over fruit and cheese. Toss.
Variations:
If preferred, can serve as a smaller side salad (yield: 16 servings at 1/2 cup each).
