For some recipes that call for heavy cream, the calories and fat can be skimmed off with "Heavy Cream Substitute". By replacing the whole milk with water and tapioca, and the butter with low-fat ricotta cheese, the calories and fat drop dramatically.
Put the tapioca and water into a small sauce pan and let it sit for 5 minutes. Bring to a boil and then turn the heat down to a simmer for 2 to 3 minutes.
Add in a small amount of the ricotta cheese to the tapioca mixture. Then, continue to gradually add the remaining ricotta cheese to the tapioca mixture.* Pour the mixture into a blender and purée until creamy (about 1 minute).
Cover and refrigerate until room temperature, or keep chilled until ready to use.
If using part-skim ricotta cheese, adjust the nutrition.
