This is a light impressive dessert that is healthy yet easy to prepare.

Ingredients:

4 apples (such as Royal Gala), peeled, cored and cut into wedges

1 Tbsp lemon juice

1 1/2 Tbsp superfine sugar (or castor sugar)

100 g roughly chopped coconut cookies or other sweet biscuit

150 g blueberries

2 cup nonfat Greek style natural yogurt (such as Total), or strained nonfat plain yogurt

1 Tbsp honey


Directions:

Place the apple wedges in a small saucepan and toss with the lemon juice and sugar. Cover and cook on low heat for 5 to 10 minutes or until the apples are tender. Set aside to cool.

Divide the cooked apples among 4 glasses or serving dishes. Sprinkle a layer of chopped coconut cookies on top of the apple mixture. Next add a layer of blueberries, reserving about 20 for decoration. Spoon the yogurt on top of the blueberries and smooth with the back of the spoon. Drizzle over the honey and scatter with the reserved blueberries.

Microwave Directions:

Place the apple wedges in a microwave proof bowl and toss with the lemon juice and sugar. Cover and cook in the microwave on high for 5 minutes or until the apples are tender. Set aside to cool.
