Use unflavored gelatin, not flavored.
Traditional ice cream is laden with calories and fat. Our makeover recipe replaces the half-and-half, heavy cream and egg yolks with skim milk, gelatin and water resulting in a light and delicious dessert.

3 cup half-and-half 1 cup heavy cream 7 extra large egg yolks 9 oz sugar 1 Tbsp vanilla extract |
Mix gelatin with boiling water and stir until it dissolves. Dissolve sugar in skim milk over a medium heat without letting the mixture boil. Remove from the heat and add the gelatin mixture. Stir in vanilla.
Pour into a shallow container and freeze until the mixture has set but not frozen solid. Mix with an electric beater until the mixture is white and fluffy. It should be at least double it's original volume. Freeze until solid.
If a larger recipe serving is desired, divide it into eight 1/2 cup servings.
For a fruity flavor try adding fresh fruit when you beat the mixture. Or, for an occasional treat, serve on low-calorie cake, pie or a low-fat brownie topped with chocolate sauce.
