Great way to finish a meal on a cool winter's day.

Ingredients:

2 cup unsweetened apple juice

1 Tbsp vanilla extract

1 cinnamon stick

4 ripe small bananas, peeled, sliced

1 tsp nutmeg

4 Tbsp nonfat plain yogurt or Ricotta Cream (see recipe link below)


Directions:

Simmer apple juice, vanilla extract and cinnamon in a saucepan for 5 minutes.

Add bananas, cover and simmer 8 to 10 minutes until tender.

Remove cinnamon stick before serving. Serve with yogurt (or Ricotta Cream) and nutmeg.

Variations:

For an additional sweet flavor, add 1/4 cup unpacked raisins, or to taste.
