  • 2 cup unsweetened apple juice
  • 1 Tbsp vanilla extract
  • 1 cinnamon stick
  • 4 ripe small bananas, peeled, sliced
  • 1 tsp nutmeg
  • 4 Tbsp nonfat plain yogurt or Ricotta Cream (see recipe link below)


Simmer apple juice, vanilla extract and cinnamon in a saucepan for 5 minutes.

Add bananas, cover and simmer 8 to 10 minutes until tender.

Remove cinnamon stick before serving. Serve with yogurt (or Ricotta Cream) and nutmeg.


For an additional sweet flavor, add 1/4 cup unpacked raisins, or to taste.
