  • 3 pint soymilk (48 fl. oz)
  • 1/4 cup honey
  • 3/4 cup short-grain white rice
  • 1/2 cup seedless raisins (unpacked)
  • 1/4 tsp ground cardamon (optional)
  • 1 Tbsp pistachio nuts, chopped


Place soymilk, honey, rice, and raisins in a large heavy-based saucepan.

Bring mixture to a boil, then reduce heat and simmer, stirring occasionally for 45 minutes or until mixture thickens. Add cardamon.

Serve topped with pistachio nuts.
