Succulent seafood soaked in a savory sauce.

Ingredients:

1 Tbsp olive oil

1 onion, chopped

2 cloves garlic, chopped

2 skinless chicken breast fillets, diced

3 cup long grain rice

5 cup reduced sodium chicken stock

1 pinch saffron threads, dissolved in 1 tablespoon water

2 1/4 lb assorted seafood (green prawns, calamari, mussels, octopus)*

1 green pepper, sliced

1 cup green peas

3 1/2 oz sliced pepperoni


Directions:

Heat oil in a paella pan or large heavy-based skillet. Sauté onion, garlic and chicken until chicken is browned. Add rice and coat in the oil. Add stock and saffron and smooth out the surface of the paella.

Arrange the seafood, green pepper, peas and pepperoni in the paella. Cook over a very gentle heat for 20 to 30 minutes or until all the stock has been absorbed and the seafood is cooked.

Variations:

* If desired, substitute the octopus with scallops, crab or lobster (serving suggestion is not included in the nutritional analysis).
