Salmon and Cream Cheese Roll-Ups

This combination of ingredients makes a perfect sandwich filling.

Ingredients Convert to Metric

  • 2 Tbsp fresh chives, chopped
  • 2 Tbsp capers, drained and chopped
  • 1 Tbsp lemon juice
  • 1 medium red onion, thinly sliced
  • 1/2 medium cos lettuce, shredded
  • 3 large pita bread
  • 8 1/2 oz light spreadable cream cheese
  • 14 oz canned pink salmon, drained, flaked

Directions:

Using an electric mixer, beat cream cheese, capers, chives and juice in small bowl until combined.

Spread cheese mixture along center of each pita, top with salmon, onion and lettuce; roll up.

Cut rolls in half and serve.

Tips:

Recipe can be made several hours ahead. Wrap firmly in plastic wrap or foil to retain freshness.
