  • 1 whole, fresh pineapple, peeled
  • 2 1/4 lb green prawns, peeled and deveined
  • 1 clove garlic
  • 0.70 oz light buttery spread
  • 1/4 cup honey
  • 1 Tbsp sweet chili sauce (or to taste)
  • 1 Tbsp soy sauce

Directions:

Cut 24 bite-sized wedges from pineapple. Thread pineapple and prawns alternately onto skewers.

Combine garlic, buttery spread, honey, chili sauce, and soy sauce. Mix well and marinate skewers in marinade for 30 minutes.

Heat and grease barbecue or grill and cook kebobs quickly over high temperature, for 5 minutes. Brush with reserved marinade during cooking.

Variations:

For a complete meal, serve with a salad, and rice or crusty bread.

Sliced calamari tubes, baby octopus or fish pieces may be added to kebobs.

Tips:

To prevent breakage of wooden skewers, pre-soak them for 10 minutes before stringing on food. Can use short or long skewers.
