Why not make these lovely individual puddings as an alternative to the traditional Christmas pudding this year?

Ingredients:

1 1/2 cup mixed dried fruit with cherries

1/2 cup walnuts, macadamias or preferred nuts

57.14 g chopped glace ginger or pineapple

1/2 cup sweet sherry

0.47 L low-fat vanilla ice cream (16 oz)

0.47 L low-fat strawberry ice cream (16 oz)

1 cup fresh or frozen blueberries


Directions:

Combine dried fruit, nuts, ginger and sherry in a bowl. Cover and soak overnight.

Allow vanilla ice cream to soften for about 10 minutes. Place in a large bowl and fold the soaked fruit through.

Divide the mixture between eight individual moulds to half fill. Press down to flatten top and place in freezer until firm.

Soften strawberry ice cream and fold blueberries through. Spoon over top of vanilla ice cream and press down. Cover and freeze until ready to use.

To remove from moulds, dip quickly in hot water and then upturn onto plates. Serve decorated with mixed berries.
