
Looking for something new to top off a holiday meal? Try this easy-to-prepare dessert!
1 package (4-3/4 oz.) regular vanilla pudding and pie filling mix
2 cup light eggnog
1 1/4 cup skim milk
1 Tbsp light rum (or rum extract)
1/8 tsp ground nutmeg
1 prepared 9-inch pie crust, baked
1/2 cup light whipped cream
1/8 tsp nutmeg, extra (for garnish)
Cook mix as directed on package (use pie filling directions), except use 2 cups eggnog and 1 1/4 cups milk. Stir in rum and nutmeg; pour into baked crust.
Cover surface with plastic wrap and chill several hours. Garnish with nutmeg. Serve each slice with a tablespoon of light whipped cream.
For a richer tasting pie, replace skim milk with 2% reduced-fat milk.
