Serve these sweet treats with coffee or other hot beverage.
Ingredients:
1 cup seedless raisins
3 Tbsp rum
1 cup almond meal
1 cup flaked almonds
1/2 tsp almond essence
1/2 cup unsweetened cocoa
1/2 cup Equal® Spoonful (or 12 packets Equal® sweetener)
Directions:
Soak raisins in rum overnight. Drain and place in a food processor with almond meal, flaked almonds, almond essence and Equal®.
Process until just combined. Shape mixture into balls and roll in cocoa.
Variations:
Alternatively, roll the balls in coconut.
