Potato-Crusted Meatloaf

This is sure to become a family favorite!

Ingredients:

1 cup fresh bread crumbs

1/2 cup finely chopped onion

1/2 cup grated reduced-fat parmesan cheese

1 Tbsp chopped fresh basil

2 eggs, lightly beaten

2 cloves garlic, crushed

1 1/8 lb extra lean ground beef (97% lean, such as Healthy Choice)

1/3 cup tomato sauce

1 Tbsp Worcestershire sauce

1 dash each of salt and pepper

1 1/8 lb blue or white potatoes, peeled, chopped and cooked

1/4 cup skim milk


Directions:

Preheat oven to 400ºF.

In a large bowl, combine all ingredients except potatoes and milk; mix well. Spoon mixture into a loaf pan. Bake in a preheated oven for 30 minutes or until meatloaf is browned all over. Leave oven on.

Mash potatoes, adding in the milk as potatoes are mashed. Spread mashed potatoes over meatloaf. Bake an additional 15 minutes to brown the potato topping. Serve immediately.
