


Yearning for hash browns? Try this unique quiche!
3 cup frozen hash brown potatoes, defrosted and patted dry
1/2 cup chopped sweet onion, divided
2 Tbsp chopped green pepper
1 dash of white pepper (for crust)
1 egg, beaten (for crust)
1 spray of non-stick cooking spray, as needed
1 1/2 cup diced lean turkey ham
1 cup grated Swiss cheese, reduced-fat
1 cup skim milk
4 eggs (for filling)
2 tsp prepared mustard
1/4 tsp white pepper (for filling)
CRUST: Preheat oven to 400ºF. In a small bowl, combine potatoes, 1/4 cup onion, green pepper and dash of white pepper. Fold in 1 beaten egg. Spray 9-inch pie plate with non-stick cooking spray. Pat potato mixture evenly into prepared pie plate to form a crust, building up sides to rim.
Bake in preheated oven for 25 to 30 minutes or until crust is golden brown (note: recipe may be prepared up to this point, cooled, covered and refrigerated until ready to serve).
Place potato crust in cold oven. Set temperature to 350ºF. Heat 10 minutes. Remove crust from oven and continue with following steps for the filling.
FILLING: In layers, sprinkle turkey ham, remaining onion and cheese evenly over crust.
In a small bowl, combine milk, 4 eggs, mustard and 1/4 tsp. white pepper; mix well. Pour over ingredients in crust.
Bake in a preheated 350ºF oven for 30 to 35 minutes or until a knife inserted near center comes out clean. Let stand 5 minutes before cutting.
