Brighten up your table with this festive, easy-to-make gelatin mold!

Suggestions:

Serve it as a gelatin salad, as a light dessert, or as an alternative to the traditional cranberry sauce.

Ingredients:

1/2 cup cold water

1 (6 oz) package raspberry flavored sugar-free gelatin dessert

1 (8 oz) can jellied cranberry sauce

1 2/3 cup low-calorie cranberry juice cocktail

1 cup bananas, peeled and sliced

Directions:

In medium-size saucepan over medium-high heat, bring water to boil; stir in gelatin until dissolved.

Fold in cranberry sauce. Reduce heat to medium and cook mixture until sauce is melted. Stir in cranberry juice cocktail.

Refrigerate mixture until slightly thickened and syrupy. Fold in banana slices. Pour mixture into 4-cup mold; cover and refrigerate until gelatin is set.

Microwave Directions:

In 1-quart microwave-safe container heat water at HIGH (100% power) one minute or until water boils. Stir in gelatin until dissolved.

Fold in cranberry sauce. Microwave mixture at HIGH (100% power) 2 to 3 minutes, or until sauce is melted, stirring every minute. Stir in cranberry juice cocktail.

Refrigerate mixture until slightly thickened and syrupy. Fold in banana slices. Pour mixture into 4-cup mold; cover and refrigerate until gelatin is set.

Variations:

Top with a dollop of low-calorie whipped topping and serve as a dessert or snack (for whipped topping recipes, see links below).
