When you want a salad to impress, try this stunning looking gelatin molded cranberry salad - all the taste but with 58% less calories than traditional recipes.

Ingredients:

2 cup whole raw cranberries

1 cup water

1 cup Equal® Spoonful (or 24 packets Equal® Sweetener)

1 small package cranberry or cherry sugar-free gelatin

1 cup water

1 cup diced celery

1 can (7.25 oz) crushed pineapple, in juice

1/2 cup chopped walnuts


Directions:

In a medium saucepan, put the raw cranberries and 1 cup water and bring to a boil. Remove from heat when cranberries have popped open. Add Equal® and stir. Set aside to cool.

In a separate saucepan, bring 1 cup of water to a boil and pour into a medium sized mixing bowl. Dissolve the gelatin into the 1 cup of boiling water. Add the cooked cranberry sauce and mix thoroughly. Add celery, pineapple and walnuts; stir to blend.

Pour the cranberry gelatin mixture into a mold or bowl. Place in the refrigerator and cool until set.
