A tantalizing way to make the most of seasonal strawberries.

Ingredients:

1 Tbsp warm, low calorie strawberry jam

1 egg white

1/2 tsp liquid sugar substitute

1 can reduced fat evaporated milk, chilled

1 1/2 cup strawberries, hulled

1/4 tsp liquid sugar substitute, extra

1 1/2 tsp vanilla extract


Directions:

Purée strawberries, 1/4 teaspoon sugar substitute and jam.

Place milk, egg white, vanilla and 1/2 teaspoon sugar substitute into a food processor or mixmaster and process until thick and fluffy.

Pour mixture into a freezer proof bowl and freeze until beginning to set around the edge.

Remove from freezer and beat until smooth. Swirl through 2/3 of strawberry purée and return to freezer until firm.

Use remaining strawberry purée as a sauce.
