Ingredients

  • 1 large can sauerkraut (30 oz), drained
  • 3 stalks celery, sliced
  • 1 medium onion, diced
  • 1/2 bell pepper (your choice of color), diced
  • 1/2 cup diced pimento
  • 1/3 cup oil (such as canola oil)
  • 1/4 cup white wine vinegar
  • 3/4 cup Equal® Spoonful (or 18 packets Equal® Sweetener) *
  • 1 dash each of salt & pepper, or to taste

Directions:

Combine sauerkraut and vegetables in a large bowl. Whisk together oil, vinegar and Equal® in a small bowl. Toss vegetables and dressing to combine. Season with salt and pepper.

Refrigerate, covered, several hours or overnight to allow flavors to blend.

Variations:

* Can substitute 3/4 cup sugar for Equal® (recipe made with sugar: 161 calories, 7 g fat, 24 g total carbs, 17 g total sugars).
