Ingredients Convert to Imperial

  • 4 vine-ripened Italian tomatoes
  • 1 Tbsp sugar
  • 1 Tbsp balsamic vinegar
  • 228.57 g dry fettuccini
  • 2 cup fresh basil leaves, coarsely chopped
  • 1/4 cup shredded part-skim mozzarella cheese
  • 1 Tbsp olive or canola oil
  • 1 Tbsp capers, rinsed and drained
  • 2 Tbsp grated fresh parmesan cheese

Directions:

Lay tomatoes in a dish and sprinkle with sugar and balsamic vinegar. Allow to marinate for 20 minutes.

Cook pasta according to directions on packet. Combine tomato, basil, mozzarella, oil and capers in a bowl and mix well. Spoon over hot pasta and serve topped with grated parmesan.

Variations:

Sugar can be replaced by 1 tablespoon of sugar substitute (adjusted recipe = 512 calories, 88g carbs, 4.3g sugars).
