Italian Tomato Sauce

Yield: 5 x ½ cup servings

An authentic Italian sauce perfect as an accompaniment to meats, vegetables or pasta dishes.

Ingredients:

4 medium onions, chopped

3 garlic cloves, crushed

14 oz tomatoes, canned

1/2 cup tomato paste

1/2 cup water

1/4 tsp 'Lite' or table salt

1/2 tsp black pepper

2 Tbsp canola oil


Directions:

In a heavy-based saucepan, fry the onion and garlic in oil until
transparent.

Add chopped, tomatoes, tomato paste, water, salt and black pepper.

Simmer on very low heat for two hours, stirring frequently.

Microwave Directions:

Cook onions and garlic in oil in a covered microwave dish on HIGH for 4 minutes.

Add chopped tomatoes, tomato paste, water, salt and black pepper.

Cover and cook on MEDIUM LOW for 45 minutes.

Variations:

Ham, mushrooms or olives can be added to vary the sauce when used in pasta dishes.

Recommended to use in Hedgehogs recipe.
