Middle Eastern Dessert Rice

An authentic Middle Eastern sweet treat.

Ingredients:

1/4 cup honey

3/4 cup short-grain white rice

1/4 tsp ground cardamon (optional)

1 Tbsp pistachio nuts, chopped

1/2 cup raisins

1.41 L soy drink


Directions:

Place soy drink, honey, rice and raisins in a large heavy-based saucepan.

Bring mixture to the boil, then reduce heat and simmer, stirring occasionally for 45 minutes or until mixture thickens.

Add cardamon.

Serve topped with pistachio nuts.
