A wonderful mix of tender pork loin, sweet mango and a touch of smoky island spices.

Ingredients:

2 Tbsp olive oil, divided

0.90 kg lean pork loin, cubed

1 tsp salt

1 tsp black pepper, to taste

2 Tbsp cumin

1/2 cup sliced green bell pepper

1 medium green onion, sliced

5 cloves garlic, crushed

1 mango, cut into pieces


Directions:

Lightly spray cooking spray on a large skillet, and then add 1 tablespoon of the olive oil.

Season the pork cubes with salt and pepper; sprinkle with cumin. Brown the pork cubes until done.

Add the remaining 1 tablespoon of olive oil to another skillet. Sauté bell pepper, onion, garlic, and mango for about 5 minutes, stirring frequently.

Transfer the cooked bell pepper mixture to the cooked pork; stir until well combined.

Variations:

Lean pork loin chops can be used instead of cubed pork loin.

Serve with brown or natural wild rice and your choice of vegetables.
